I didn't understand what she said. Is there a reason because she wear pantyhose or it's only a very appreciated choice?

It's things nice and tucked in. Also hose are great to prevent chaffing for riders.

That was actually a fascinating video, aside from the pantyhose obviously!

She wears pantyhose (tights) to keep the shirt from coming loose and flapping wildly in the wind (and
possible causing her to fall off the horse!)

Also, in the movie Star Trek Generations, there's the horse riding scene with Kirk and Picard.

Shatner was a skilled horse rider and gave Patrick Stewart something to stop him from getting a major rash from
riding his horse - a pair of pantyhose! So there's another reason she wore stockings, to keep from getting a
bad rash on her legs.

Meaning, there may be many more female jockey videos featuring women wearing pantyhose out there.....
